This recipe was deveoped back in 2012 to celebrate the first year of Erin Gleeson’s website, The Forest Feast. She’s come a long way since then, with multiple cookbooks and many, many more recipes. We love coming back to this simple, celebratory one which doubles as such a beautiful tribute to the Jewish holiday Tu Bishvat.
Tu Bishvat is a harvest celebration that’s lovingly called the “birthday of the trees” and emphasizes the importance of growing trees and harvesting fruits and nuts that grow from trees and from the ground. It’s also a reminder that spring is around the corner. On Tu Bishvat, it’s customary to have a seder, which includes… you guessed it: lots of fruits and nuts!
