Zatar (also spelled za’atar) is a lovely Middle Eastern spice made up (usually) of a blend of salt, sumac (a tart red dried fruit powder), sesame seeds and thyme. You can eat this instead of challah on Shabbat or serve it as an appetizer. It’s a great multicultural recipe that’s easy to whip up if you’re hosting a Shabbat dinner.

Ingredients for 4 servings

  • Pizza dough (You can use store-bought. Try Trader Joe’s)
  • Olive oil
  • Zatar
  • Pinch of sea salt
  • Greek yogurt for dipping

Directions

  • Pre-heat oven to 375°F
  • Roll out the dough until it’s nice and thin, as though you were making a thin-crust pizza
  • Drizzle the dough with lots of olive oil. Then sprinkle with a good amount of zatar and a pinch of sea salt.
  • Bake on a cookie sheet for 15 minutes until brown on the bottom and then rip off pieces to dip in a bowl of thick greek yogurt that’s been sprinkled with a bit more olive oil and zatar.

After several years of working as a food photographer in New York City, Erin Gleeson moved to a cabin in the woods in California where she created The Forest Feast food blog and cookbook series which fuse her love of cooking with her own photography and watercolor paintings. Inspired by local ingredients she creates simple, mostly-vegetarian recipes that are full of fruits and vegetables. Her recipes are presented as visual diagrams that are simple to follow and are easy enough for a weeknight, yet impressive enough for a party. Erin also has a line of Forest Feast stationery and gift items which feature her artwork. She has just returned from 3 months in Europe where she did research for her 4th cookbook which will be focused on Mediterranean small plates (Abrams, Fall 2019). Follow along @theforestfeast.
